It seems like the main focus of GMO is herbicide and pesticide resistance, because GMO companies like Monsanto profit from selling herbicide and pesticide. According to research, (http://phys.org/news/2016-09-largest-ever-reveals-environmental-impact-genetically.html), GMO soybeans have increased exposure to herbicides, which is probably not good for you. The companies that create GMO products are motivated primarily by short term profit, so it’s difficult to trust that they have the consumers best interest in mind. I’m sure there are opportunities for good GMO products, but I don’t trust corporations to make them for us. Even products that are supposedly good for consumers are short sighted and full of controvercy (https://en.wikipedia.org/wiki/Golden_rice). You make good arguments about the problems with the non-GMO label, but I’m not sure actively avoiding the label is the best solution. Lack of a non-GMO label doesn’t guarantee that less herbicides or pesticides have been used on the product, so how does that help you?
